My husband loves soups and mushrooms, not necessarily together, but surely he loves mushroom soups. So I’m thinking of cooking this recipe that I found. It seems very easy to follow. I just need to get the ingredients right.

Wild Mushroom Soup
Ingredients:
1 oz dried wild mushrooms, such as morels, ceps or porcini
6 cups chicken stock
2 tbsp butter
2 onions, coarsely chopped
2 garlic cloves, chopped
2lb button or other cultivated mushrooms, trimmed and sliced
1/2 tsp dried thyme
1/4 tsp freshly grated nutmeg
2-3 tbsp plain flour
1/2 cup Madeira or dry sherry
1/2 cup creme fraiche or soured cream
salt and freshly ground black pepper
snipped fresh chives, to garnish
How to cook it:
1. Put the dried mushrooms in a sieve and rinse well under cold running water.
2. Put the mushrooms in a sauce pan. Add 1 cup of stock then bring to a boil. Remove the pan and put it aside for 30 minutes.
3. Melt the butter in another sauce pan over medium heat. Add onions then cook for 5 minutes.
4. Mix in the mushrooms and garlic and cook for another 5 minutes. Add salt, pepper, nutmeg, and thyme. Sprinkle the flour then cook for 5 minutes. Don’t forget to keep on stirring.
5. Put in the Madeira or dry sherry. Add the remaining chicken, mushrooms and liquid from which they were soaked. Cover the pan and let it cook for 30 minutes.
6. Puree the soup in a blender then add soured cream and chives.
7. Serve hot and enjoy!
