Sauteed Bittermelon With Egg (Ginisang Ampalaya Na May Itlog)

Looking for a cheap yet healthy and delicious viand today? Why not try my Sauteed Bittermelon with eggs today?

This is my version of this really healthy dish. I just saute garlic, onion and tomato in a teaspoon of oil. Then put sliced ampalaya or bitter melon and let it simmer under medium heat for 3 minutes.

After that, crack and scramble an egg then put it on top of sliced ampalaya, do not mix. Taste and add a dash of salt based on your preferences. Let it simmer for another two minutes then serve over cooked rice. :)

Seems easy isn’t it? Do not forget to wash ampalaya with water and rock salt before cooking it. Do not mix ampalaya while cooking it, just let it simmer along with the rest of the ingredients to preserve the flavor.

Aside from egg, you can also add ground pork and /or shrimps. I like it with eggs if I am on a budget, but I also cook this with ground pork and /or shrimps to make it extra special. :)

So the technique for it not to taste so bitter is to rub it with salt? My mom is the worst cook in terms of bittermellon, she loves cooking it but it’s always the same taste.. Hehe. Haven’t tried it too.

@Violy, some rub these with salt, while I just soak the sliced pieces in water and rock salt. That is why you do not need to put salt when you cook it, unless you wash the ampalaya slices in running water (again) after soaking it in rock salt solution.

Looks yummy po! Naku I haven’t eating ampalaya ever since. Last time pa na kumain ako nyan 2009 when my sister cooked it ang sarap hindi mapait. :D
