Are you looking for a Menudo recipe online? Or information on how to cook Menudo? I would say that Menudo si one of my comfort food and that through the years, I have tried to a lot of ways to cook this dish. Here is my version of cooking this Menudo recipe:

Menudo Ingredients:

1/2 kilo of pork cut into small cubes (you can also choose one with ribs if you want)

1/4 slice of Dari Creme or Butter Cup margarine (if you are going to get the bar type)

4 cloves of garlic, crushed

2 small onions, chopped

4 pcs. hotdog, sliced

1 250 grams pouch of Del Monte Tomato Sauce

1 cup garbanzos

1 red bell pepper

4 pcs. of medium sized potatoes, cubed

dash of pepper

salt to taste

Optional ingredients:

1 pack raisins

1 medium sized carrot, cubed

1 Reno Liver Spread

How To Cook Menudo:

1. Melt margarine and fry pork, until brown.

2. Put the onion in the same sauce pan, saute with pork.

3. Put the garlic in, saute with pork as well.

4. Put in sliced hotdog and saute with the previous ingredients.

5. Pour in tomato sauce and add water, let it simmer initially for 5 mins.

6. Drop the red bell pepper and garbanzos (the raisins, carrots and liver spread if you have those as well)

7. Drop the potatoes (uncooked) and let it simmer for 30 mins until the pork is tender, but if you boiled the potatoes and drained them prior to putting it in, then just add the potatoes, at least the last ten minutes of cooking it before you lower the heat.

7. Add a dash of salt and pepper to taste

8. Lower heat, let it simmer for two more minutes and serve.

Tips:

I use margarine as cooking oil substitute because it really adds a sweeter taste and aroma to my Menudo.

You can also choose whether to let the red bell pepper simmer longer with the rest of the ingredients if you really want it to add flavor to your Menudo, but if you want a lighter flavor and aroma on the dish then just drop it on the last ten minutes before you lower the heat

I boil the potatoes separately to make sure that it won’t drain much of my sauce and for it to be well cooked along with the rest of the ingredients

Hope you like my Menudo recipe. How about you? How do you cook Menudo?

I loved every minute of it. I went from one subdivision to another just to pass time while biking. It also helped me sweat too much hehe, thanks to the speed that I used to keep while biking.

Yes, it was long ago and I really miss doing it that I am planning to buy a new bike for me. Good thing my husband Johann also loved the idea of us doing it because we seriously have a lot of exercising to do hehe.

I am now scouting for great bike deals because I want to enjoy my weekends outside. Just a great option and break from all my blogging activities.

Yes, it has been more than 10 months since my Dad left for Bermuda. It was such a regular thing for us because I am used to see him leave us for another country. I know that he is doing this so he can help provide for our needs. But that was before.

Now that we are finally done with our studies and are both considered professionals in our field, I would like him to finally settle down with us. I would like him and my mom to enjoy their married life and make up for all the lost times because they are away from each other. I know that it won’t be easy for my Dad to just do that, because I knew him as a workaholic and he really loves what he is doing for a living. So I guess we still have to count few more years before this will finally happen.

But for now, I am just so excited to finally see him again, just like any daughter of an Overseas Filipino Worker.

I admit that I have a sweet tooth! When I was young, my parents would consistently remind me not to have too much of these candies or else I’ll lose all my teeth. And worse, they told me that should I lose it all, those will never grow back.

That took a toll on me because I really resisted eating such treats (countless times). Thanks to my cousin/helper that time, she would just tell me stories, buy me some time until I forget that I am craving for more sweets.

As I mature, however, I give myself some treats little by little. No, I do not have to buy candy canes as a reward for some job well done, but I settle for bite sized versions of some chocolates perhaps. I seldom see candy canes now in our area (even in my Mom’s convenience store) but whether its Christmas or not, I will buy one if I encounter some of these elsewhere.

When I was a little girl, I came to know my Mom as a disciplinarian. She would always remind me to act appropriately, give courtesy to others and just be a good girl all the time. At that time, it seemed that she single-handedly did everything for me, as my chef dad is always away for overseas work.

I even remembered how she would ask me to sing and talk to my Dad as she held the radio close to me to record my voice. So whenever we had those recording sessions, I would have to stop playing and do it. Only when we’re through that I will be allowed to play with the other kids again.

When it comes to budgeting, she has her own way to do it. She would prefer to allocate just good enough budget for food to keep us healthy, but she would always tell us not to leave food on the plate (literally). She would always remind us to only eat what we can consume and not to waste food because it can also mean wasting my Dad’s time and effort in his work.

And that is something that I am doing until now, something that I can pass on to my kids as soon as I have one. Aside from that she would always impose for us to take care of our things so we don’t need to buy one, talk about being frugal.

We had our misunderstandings over things especially as I grow older, but that’s normal. I will tell you more of my Mom in my next few posts, but for now, I would like to share with you how thankful I am that I have my Mom with me.
